Egg Potato Curry (Aloo Anday)
Ingredients
- Oil 1/2 cup
- Onions 1large sliced
- Tomatoes 2 large chopped
- Potatoes 6 large cubed
- Eggs 8 scrambled
- Green chillies 3 chopped
- Salt 1 tsp
- Red chilli powder 1tsp
- Turmeric 1/2 tsp
- Cumin seeds 1tbsp
- Garam Masala 1tsp
- Fenugreek leaves 1 1/2 tbsp
Recipe
- Put oil in a pan, add onions and cook till transparent. Add tomatoes and green chillies.
- Add salt, turmeric, red chilli powder, cumin seeds, fenugreek leaves mix well and cook on high flame till the oil comes to the surface.
- Add potatoes and 1 glass of water. Cook on medium flame till the potatoes are completely cooked and water dries.
- Add eggs and keep stirring till the eggs are completely mixed and looks like scrambled eggs on medium flame.
- Add green chillies and fresh coriander and garam masala and mix well.
- Serve hot.
