Egg Potato Curry (Aloo Anday)

Ingredients


  1. Oil 1/2 cup
  2. Onions 1large sliced
  3. Tomatoes 2 large chopped
  4. Potatoes 6 large cubed
  5. Eggs 8 scrambled
  6. Green chillies 3 chopped
  7. Salt 1 tsp
  8. Red chilli powder 1tsp
  9. Turmeric 1/2 tsp
  10. Cumin seeds 1tbsp
  11. Garam Masala 1tsp
  12. Fenugreek leaves 1 1/2 tbsp

Recipe


  1. Put oil in a pan, add onions and cook till transparent. Add tomatoes and green chillies.
  2. Add salt, turmeric, red chilli powder, cumin seeds, fenugreek leaves mix well and cook on high flame till the oil comes to the surface.
  3. Add potatoes and 1 glass of water. Cook on medium flame till the potatoes are completely cooked and water dries.
  4. Add eggs and keep stirring till the eggs are completely mixed and looks like scrambled eggs on medium flame.
  5. Add green chillies and fresh coriander and garam masala and mix well.
  6. Serve hot.
