Mutton Leg
Method 1
Ingredients
- Mutton leg 1 (2 kg weight)
- Papaya paste 4 tbsp
- Lemon juice 2 tbsp
- Ginger garlic paste 2 tbsp
- Green chilies 4 (chopped)
- Red chili powder 1 tbsp
- Black pepper 1 tbsp (crushed)
- Garam masala powder 1 tsp
- Salt 1 tsp or more if you want
- Oil 4 tbsp
- Onion 2 medium (sliced)
- Tomato 2 (sliced)
- Capsicum 2 (sliced)
- Aluminum foil
Recipe
- Debone mutton leg and beat with hammer. Apply papaya paste and leave for 1 hour.
- In a bowl combine lemon juice, ginger garlic paste, green chilies, red chili, black pepper, garam masala, salt and oil.
- Coat mutton leg with this marination and leave for 4-6 hours.
- Then put mutton leg on aluminum foil, top with onion, tomato, and capsicum and wrap carefully.
- Bake in preheated oven at 180 C for 40-50 minutes or until fully tender.
- Set in serving platter garnish with lemon wedges and sliced onion.
- Serve hot.
Method 2
Ingredients
- Mutton leg 1, ½ kg
- Onions 2
- Tomatoes 4
- Red chili 2 tbsp or to taste
- White cumin 1 tbsp
- Ginger 1 tbsp
- Garlic 1 tbsp
- Green chilies 4 to 5
- Salt to taste
- All spice powder 1 tsp
- Oil as required
- Water as required
Recipe
- Place the mutton leg in a heat proof dish and gently prick it with a knife.
- Heat oil in a pan and saute the onions.
- Now add tomatoes, red chili, cumin, ginger, garlic, green chilies and salt, then saute more for a while.
- Marinate mutton leg in this mixture.
- Again prick the mutton leg with a fork this time.
- Take a large pan and pour required water in it, now place small bowl up side down in it making sure the water level does not touch the top surface of the bowl.
- Now place the heat proof mutton leg dish over the bowl.
- Cover the pan and cook on the stove till tender.
- Take out the done mutton leg roast in a serving platter and sprinkle all spice powder over it.
- Serve hot.
Method 3
Ingredients
- Mutton leg 1
- Egg 1
- Raw papaya paste 1 cup
- Yogurt 1/2 cup
- All spice powder 1 tsp
- Cumin powder 1 tsp
- White pepper 1 tsp
- Black pepper crushed 1 tbsp
- Gram flour 2 tbsp
- Ginger garlic paste 2 tbsp
- Red chili powder 3 tbsp
- Vinegar 6 tbsp
- Oil 3-4 tbsp
- Green coriander for garnish (optional)
- Food color a pinch
- Salt to taste
Recipe
- Make deep slits on the mutton leg with a sharp knife.
- Now marinate it with vinegar and salt, leave it for 10 to 15 minutes.
- In a mixing bowl mix oil, gram flour, white pepper, egg, black pepper, all spice powder, cumin powder, red chili powder, papaya paste, food color and ginger garlic paste.
- Now coat meat with this batter and leave it for 2 to 3 hours.
- Now put it in steamer and steam it for 25 to 30 minutes.
- Then put it in pre-heat oven on 200c for 25 to 30 minutes.
- In between baking baste it with butter or oil.
- When its changes its color dish it out and garnish it green coriander.
- Serve hot.
