Fresh Cakes
Chocolate Cake
- Boiling water 1 cup
- Vegetable oil 1/2 cup
- Plain flour 1 & 3/4 cup
- Dark cocoa powder 3/4 cup
- Caster sugar 2 cup
- Eggs 2
- Baking powder 1 & 1/2 tsp
- Baking soda 1 & 1/2 tsp
- Salt 1/2 tsp
- Strong coffee 1 tsp
- Vanilla essences 1 tbsp
- 2 cake tins 8inch (greased and floured add baking paper at he bottom)
- Powder sugar 3 cups
- Dark cocoa powder 2/3 cup
- Cream 1 cup ( can use more cream if it is to stiff)
- Butter 110g (melted)
- Vanilla essences 1 tbsp
Recipe
- Preheat oven 350f, 180c, gas mark 4.
- In a bowl sieve the plain flour, baking powder, baking soda, salt, sugar, cocoa powder, then mix it with a spoon.
- Mix coffee with boiling water.
- Then add vanilla, oil, eggs in the dry cake mixture and beat, then add the boiling coffee and beat once again.
- Now divide the batter in the cake tins, bake for 30 to 35 minutes or until a tooth pick inserted in the middle of the cake comes out clean.
- Let the cake cool for 10 minutes in the tin, then remove and let it cool completely on a rack, remove the baking paper.
- In a a bowl add powder sugar, cocoa, cream melted butter, vanilla and beat till smooth.
- Place cake on a plate and add the frosting, place the other cake on top and cover all over and around.
Chocolate Marble Cake
- Butter 225 gram
- Plain flour 225 gram
- Caster sugar 225 gram
- Chocolate chip 110 gram
- Eggs 4
- Icing sugar 1 cup
- Cherry 1 cup
- Baking powder 1 tsp
- Vanilla essence 1 tbsp
- Baking soda 1/2 tsp
- Coco powder 4 tbsp
Recipe
- Preheat an oven on 180 degree.
- Grease a baking pan or tray and sprinkle some plain flour on it.
- In a mixing bowl mix sugar and butter with an electric beater until smooth and creamy.
- Now add in eggs one by one and keep on mixing with beater.
- Now add plain flour and mix well so that it forms a dough.
- Pour this mixture in the baking pan.
- In another bowl put some vanilla essence, coco powder and chocolate chips and mix well.
- Pour it on dough.
- Now bake it for 30-40 minutes.
- When done, let it cool.
- Serve cold.
Pineapple Cake
- Sugar 100g
- Plain flour 100g
- Butter 115g (unsalted)
- Milk 1/3 cup
- Eggs 2
- Vanilla essence 1 tsp
- Baking powder 1 tsp
- Salt a pinch
- Icing sugar 1 cup
- Double cream 2 cups
- Pineapple bits 565g
- Pineapple juice 1cup (from the can)
- Pineapple rings (as many required for deco)
- Glazed cherries (as many required for deco)
Recipe
- Preheat oven 180c, 350f, gas mark 4.
- Grease the cake tin 8inch and place the baking paper in the bottom and sides and grease again, keep aside.
- Keep the cream in the fridge till needed.
- In a bowl sieve the flour, baking powder and salt, keep aside.
- In a separate bowl add sugar, butter and whisk till light and fluffy for 5 minutes.
- Add the vanilla essence and one egg at a time and beat.
- Then the flour mix and beat, then add the milk and mix it in.
- Pour the batter in the cake tin and bake it for 30 to 35 minutes or when a tooth pick inserted comes out clean. once baked let it cool down completely.
- Now cut the cake horizontally.
- In a bowl add the cream and icing sugar and beat till gets thick, then add the pineapple bits with as much cream required mix and keep aside.
- Moisten the cake with the pineapple juice about 7 to 8 tbs on each side of the cake, then add the cream mixture and place the other half of the cake on top.
- Over the cake with the remaining cream and place the pineapple rings and cherries.
