Baked Chicken

    For Soaking Chicken:
  1. Whole chicken with or without skin 1kg (remove the back bone) 
  2. Salt 1tbsp 
  3. Baking powder 5 tsp 
  4. Water enough to cover the chicken 
  5. For Marination:
  6. Oil 1/4 cup 
  7. Ginger paste 1tbsp 
  8. Crushed black pepper 1 tsp 
  9. Coriander powder 2 tbsp 
  10. Red chilli powder 1 tsp 
  11. Star anise powder 1 tsp (grind to a powder) 
  12. Paprika powder 2 tsp 
  13. Black cardamom powder 1 tsp (dry roast the seeds and grind) 
  14. Salt 1 tsp 
  15. Lemon juice 1/4 cup 
  16. Turmeric 1/2 tsp 
  17. Dry ginger powder 1/2 tsp 
  18. Dry rosemary 1 tsp 
  19. For Garnishing:
  20. Crushed red chilli 1/2 tsp (dry roasted) 
  21. Garlic 3 pieces (finely chopped &roasted in 1 tsp oil till golden) 
  22. Chicken powder 1/2 tsp

Recipe

  1. Preheat Oven 180c, 350f, Gas Mark 4. 
  2. In a large pot add water, salt, baking powder mix well add the chicken, leave it for good 15 to 20 minutes, then drain the water. 
  3. In a blender add all the spices under marination, oil, lemon juice blend well(can add little water or lemon juice if troubles while grinding) 
  4. Now add the grinned masala to the chicken inside out, sprinkle rosemary. 
  5. Place it on baking tray. 
  6. Bake the chicken each side for 25 minutes or till baked completely & has a golden colour. 
  7. Mix crushed red chilli, garlic, chicken powder, sprinkle on the baked chicken. 
  8. Serve hot with fries, salad and sauce of your choice.
