Cilantro Chilli Chicken Skewers

Ingredients

  1. Boneless chicken breast ½ kg
  2. Extra virgin olive oil ¼ cup
  3. Minced garlic 1 tsp
  4. Fresh cilantro 3/4 bunch
  5. Salt 1 tsp
  6. Black pepper 1 tsp
  7. Sweet chili sauce for basting

Recipe

  1. Cut chicken into 1 inch cubes and place into bowl.
  2. Blend olive oil, garlic and cilantro. Add marination in chicken along salt and pepper and marinade 4-6 hours. Place in refrigerator.
  3. Preheat the grill to medium heat and coat with oil. Remove chicken from the refrigerator and put 5-6 pieces of chicken on each skewer.
  4. Grill 4-5 minutes from each side.
  5. Brush sweet chili sauce on chicken just before done.
  6. Serve hot.
