Sponge Cake

  1. Butter 110g
  2. Milk 1 cup
  3. Vanilla extract 2 tsp
  4. Eggs 4
  5. Sugar 2 cup
  6. Plain flour 2 cup
  7. Baking powder 2 tsp
  8. Pan greased and put a little flour

Recipe

  1. Preheat Oven 325f, 160c, Gas Mark 3.
  2. Put flour, baking powder in a plate mix it with dry spoon.
  3. In a saucepan add milk, butter, vanilla and on medium heat wait until small bubbles form around the outside of the pan and the mixture is very hot but not boiling.
  4. In a bowl add eggs and sugar and beat on medium-high speed for 5 minutes.
  5. Once the egg and sugar mixture has tripled in volume, slowly add the hot milk mixture, mixing on low speed until incorporated.
  6. Now add the flour mixture and beat till combined.
  7. Pour the batter into the prepared pan and bake for 1 hour, checking 5 minutes prior to baking end time. A toothpick inserted into the middle of the cake should come out clean.
  8. Cool in the pan for 10 minutes before inverting onto a cooling rack.
  9. Serve with tea.
