Sponge Cake
- Butter 110g
- Milk 1 cup
- Vanilla extract 2 tsp
- Eggs 4
- Sugar 2 cup
- Plain flour 2 cup
- Baking powder 2 tsp
- Pan greased and put a little flour
Recipe
- Preheat Oven 325f, 160c, Gas Mark 3.
- Put flour, baking powder in a plate mix it with dry spoon.
- In a saucepan add milk, butter, vanilla and on medium heat wait until small bubbles form around the outside of the pan and the mixture is very hot but not boiling.
- In a bowl add eggs and sugar and beat on medium-high speed for 5 minutes.
- Once the egg and sugar mixture has tripled in volume, slowly add the hot milk mixture, mixing on low speed until incorporated.
- Now add the flour mixture and beat till combined.
- Pour the batter into the prepared pan and bake for 1 hour, checking 5 minutes prior to baking end time. A toothpick inserted into the middle of the cake should come out clean.
- Cool in the pan for 10 minutes before inverting onto a cooling rack.
- Serve with tea.
