Mutton Ginger Biryani
- Mutton chops 1 kg
- Onions 2 large (finely chopped)
- Yogurt 1 cup
- Fresh ginger 2 inch piece (finely sliced)
- Fresh ginger paste 2 tbs (heaped)
- Red chilli powder 1&1/2 tsp
- Salt 1&1/2 tsp
- Turmeric 1/2 tsp
- Garam masala powder 1 tsp
- Cumin powder 1 tsp (heaped)
- Coriander powder 1&1/2 tbs
- Oil 1/2 cup
Rice
- Rice 750 kg
- Salt 2 tbs
- Cloves 8
- Black pepper corn 8
- Cumin seeds 1 tsp
- Cinnamon stick 1 piece
- Green cardamom 3
- Black cardamom 2
- Green chilli 5
- Fresh ginger 1 inch (finely sliced)
- Orange food colour 1/4 tsp
- Kewra water 2 tbs
- Fresh coriander 1/2 cup
Recipe
- Boil rice 80% with salt, cloves, black peppercorn, cumin seeds, cinnamon stick, green cardamom, black cardamom, drain and keep aside.
- Marinate the chops with ginger paste, coriander powder, cumin powder, red chilli, turmeric, salt, yogurt mix well cover and keep for 1/2 hour in the fridge.
- Heat oil add the onions and fry till tight golden on high flame.
- Now add the chops mix and wait for a boil and fry for 2 minutes on high flame.
- Then add 2&1/2 cups of water mix cover and cook on low to medium flame, till the chops are tender and oil comes on surface.
- Now add the ginger, garam masala powder mix and close the flame.
- To assemble in a large pan first add half of the rice, chops with the masala, remaining rice, fried onions, ginger, kewra water & food colour mixture, green chilli, coriander, cover the lid with a tea towel & simmer for 5 to 10 minutes on low flame.
- Serve hot.
