Keema Biryani
Ingredients
For boiling rice:
- Rice 1 kg
- Salt 2 tbsp
- Green cardamom 4
- Black cardamom 2
- Cinnamon stick 1 piece
- Black pepper corn 1 tsp
- Cumin seeds 1 tsp
Other Ingredients:
- Oil 1/4 cup
- Mince 1 & 1/2 kg
- Onion large 1
- Tomato 4 medium
- Ginger & garlic paste 1 & 1/2 tbsp
- Red chilli powder 1 tsp
- Salt 1 & 1/2
- Coriander powder 1 tsp
- Cumin powder 1 tsp
- Turmeric powder 1 tsp
- All spice powder 1 tsp
- Green chillies 4-5
- Fresh coriander as required
- Kewra water 2 tbsp
- Food color a pinch
- yogurt 1 cup
- Lemon 1
Recipe
- Boil rice 80 percent with all ingredients written under boiling rice.
- Heat oil, add onions then add ginger & garlic paste and golden fry it..
- Add tomatoes, red chilli powder, coriander powder, cumin powder, salt and half cup water, wait till the tomatoes become paste on low flame and all water is dried.
- Now add mince mix well till the mince changes its color and leaves water.
- Add yogurt and half cup water.
- When the water starts boiling again, cover till the mince is totally cooked and all water dries up.
- Add all spice powder, green chillies and fresh coriander mix well for 2 minutes and keep aside.
- Now start layering, firstly add some of the mince in a pot, then add rice, again mice and again rice repeat the step till you add all the mice and rice.
- Cut lemon in large peices and place it on the top, dont squeeze it
- Mix kewra water and food color.
- Add it drop by drops in corners.
- Now cover the lid with a tea towel and place it on the layered pot of rice and mince, then cook for first 5 minutes on high flame and then lower the flame low to medium and simmer for further 10 minutes.
- Serve hot.
