Samosa Sauce (Chutney)
Ingredients
- Sugar 1kg
- Water 3 1/2 pints
- Crushed red chilli 1/2 tsp
- Salt 1 tsp
- Yellow food colour 1/2 tsp
- Tamarind (imli) 1/4 cup
- Corn flour 2 to 3 tbsp
Recipe
- In a pan add water, sugar and cook till the sugar dissolves on high flame.
- Now add the Tamarind (imli), mash it with your hands and cook for 20 to 25 minutes on high flame.
- Then strain the water and discard the pulp.
- Add the water back in the pan and add salt, red chilli, food colour mix and cook for further 20 minutes on high flame.
- Dissolve the corn flour with little water, make sure they are no lumps, then add it to the sauce slowly to see hoe thick you want to make it.
- Now cook for further 20 minutes on medium flame, if gets thick fast close the flame.
- Leave to cool.
- Serve cold with samosas.
